Happy Birthday 1st Quarter sisters!

Happy Birthday to all of the sisters who celebrated their Birthday in the months of January, February, and March. Last Tuesday we had a fun time gathering together and enjoying each others company. Thank you to those who were able to make it. For those who missed out, we missed you and hope to catch you next time.
Here are a few recipes from the nights menu.

White Bread
2 cups water
1 tablespoon yeast
2 1/2 tablespoons sugar
2 1/2 tablespoons oil
1 tablespoon salt
6-7 cups flour (I only do 5)

Combine all ingredients using 3 cups flour. Mix until smooth. Add enough flour until dough is not longer sticky. Knead 7 more minutes. Let rise for 30 minutes. Punch down and divide in half. Form into 2 loaves (or rolls) and place in oiled pans. Cover with clean dish towel and let rise until double in size, about 1 hour. Bake 350 for 25-30 minutes. Brush with butter.

Tortilla Soup
1/2 cup chopped onion
1 clove garlic, minced
1 40z. can green chilies, chopped
1 cup chicken broth (I use 1 can)
1 cup beef broth ( I use 1 can)
1 1/2 cup tomato juice
1 1/2 cup water
1 large tomato chopped (I use canned tomatoes)
1 tsp cumin
2 tablespoon chili powder
1 tsp salt
1 small can corn, drained
1 rotisserie chicken (precooked chicken from the deli section of grocery store) shredded

Saute onion, green chilies, then add all other ingredients and bring to a boil. (I put it in the crock pot and let it cook all day) Let simmer one hour. Serve with tortilla chips, sour cream, cheese, limes, and or guacamole.
